Beyond my expectations

Buzz has been settling in. We went into this realistically on how long it takes for a bird to feel comfortable, to bond and to be able to handle without bites. Buzz hasn't done anything we expected.
Day 1 he settled in about 5 pm and we left him alone. We did hang a mop on the side of his cage to get him accustomed but he wasn't scared of it.
Day 2 we opened his door and he was out climbing around his cage all day. He would step up for all of us. No biting, an occasional nip. He also did his first flutter down to the ground and checked out the room. We moved the mop in and he started grooming it.
Day 3 he stepped up for my mom and niece who were visiting with no nips. Escaped to the floor several more times and checked out both dog kennels. Our Boxer went to sniff him out and he firmly grabbed his cheek. No yips or anything they just observed each other then he let go and they acted like nothing had happened. When he's on the ground he does say " stay back Louie, good girl" to the dogs. We added more new toys which he has played with.
Day 4 today. This is the video from today. He wouldn't stop with the regurgitation so we put him in his cage, I hope that isn't bad. He loves to play mimic. He whistles I whistle back, I'm not very good but he will go as long as I will. He will also "shake" with my son. We are going to try his first misting this afternoon.
Like I said he is way ahead of what I expected or had read and anticipated. I have to try keep up with his progress. The lowered wings I thought was a mating/sexual behavior. Do we let it go or try to discourage it?

I admit not to be too familiar with Grey's body language. In the video he appears to be 'strutting his stuff', with the wings held out like that. (My Amazons, especially my male, do this when overly excited, and I don't necessarily offer them my hand when they're in this mode).

Now please don't be offended or take this the wrong way, but I must urge you to please exercise EXTREME caution with your Boxer and Buzz. I NEVER let any of my birds willfully 'nip' and/or 'bite' any of my dogs, regardless that they are sweet natured. Accidents can and will happen in just a blink of an eye, and IMO accidents like this are often preventable. :)

Not offended. I trust our boxer. What you can't see is the excitable chihuahua on my lap who isn't so great. I have raised exotic chickens, little guys who spent quite a bit of time inside. Our Boxer is great with them. He wasn't allowed to initiate play sessions, only the birds.

However as much as I trust them I would never trust them unsupervised! I also know Buzz was raised with dogs and he's not scared but I don't want him being mean either.

Presently have six Greenwing Macaw (17 yo), Red Fronted Macaw (12 yo), Red Lored Amazon (17 y.o.), Lilac Crowned Amazon (about 43 y.o.) and a Congo African Grey (11 y.o.)
Panama Amazon (1 Y.O.)
That does appear to be hormonal behavior to me. BUT I would neither encourage nor discourage it. The bird's gonna do it anyway, as it is part of his natural behaviors. By letting him get it out of his system, but not encouraging it, hopefully, he'll move on.

It could also be a begging display, as in begging to be picked up and held. I notice he picked his foot up when you offered your finger.
