I'm trying to introduce peppers into my Nanday's diet. Do you give them just rind or outside of the pepper or do you give them the seeds and stuff as well?

It's all OK. Try a cut piece with seeds and see how it is received. You will see then what is liked by your parrot if nothing eaten of it, it's a cheap toy LOL.
I made one version of chop thats mostly peppers, some greens too, but mostly peppers - all sorts. Red, green, orange, jalapenos , habaneros, ghost - all peppers. Salty loves this mix, when stirred up with a few teaspoons of his pellets, and them soak up the excess water. He will eat this all day long, if I let him. LOL, I have to clean his beak and footies after he finishes, otherwise it gets on my hands and hence into my mouth or eyes - it stings!
Stuff the pepper with things he likes. When you go to serve itv pull enough of the pepper apparent so that your bird can see there's something good inside.
