Volkman's take 2!

ok, so my first try with Petey and the volkmans soak and simmer was a total flop! Possibly because I was so worried about making sure the beans werecooked enough that I boiled every molecule of flavor (not to mention nutrition) out of them. He took one taste and was like.... uh, what is this goo, and why is it in my food cup?? You really expect me to eat that? Silly human...
Fast forward a few days and I decide to try again. I actually found recommended cooking time which is 45 to 50 minutes, or until beans are soft. So, after soaking them overnight, I cooked them for 90 minutes (I had to make sure...I'm an incurable worry wart. After removing them from the stove and draining and rinsing them, I cut up some sweet red pepper, jalapeno, and carrot, put the whole thing in a small glass mason jar to cool in the fridge overnight, then warmed up about an teaspoonful for him this morning. Let me tell you, he dove in and absolutely gobbled it! He would make trips between that and his pellets, but he really really enjoyed it! I'm going to order in some of the goldenfeast and higgins as well for variety.
