Changing a young ekkie's diet?

We will be picking up our male Ekkie on Friday!!! I am sooooooooooo excited!!! I did just find out however, that he really isn't eating much of anything except his pellets. He was born 7-20 and is offered various things, but he really isn't interested in them. The breeder has added baby food ontop of the veggies, beans etc....and that did seem to help a little.
He is currently on Pretty Bird Eclectus but I'd rather him have very little pellet and more fruit and veggies and organic pellets a few times a week.
What are some things I can try to wean him onto a better more raw diet?

Let him eat at your dinner table is the best thing. So everything you eat he will have if you just be patient.
Boil the veggies (beans and carrot for an example) and serve them warm.
Warm all fruit that you want him to eat. It much easier to learn him eat things when they have "right" temperature.

i had the same problem, all my eccie was eating when i got him was crushed up cookies .....ugh. very bad breeder.
what i did was get 4 sweet potatoes and boiled them, then mashed them up. While still hot I added a bit of seed (the 'bait' - you could use your pellets) and then a whole lot of frozen peas/corn (cools thge mash down before you add the fresh stuff), then heaps of finely chopped spinach, apple, grated carrot, broccolli, boiled brown rice, sprouts, anything else lying round, so I hd a big, mashed up, yummy mix....my husband calls it 'baby veges' (and has been even known to eat some himself when its fresh!)
I then bag it up into daily portions and freeze it.
He loves it, and makes a huge mess - and he cant eat the seed without getting a mouthful of nutritious veges and sweet potato! (very good for eccies - high in vitamin A)
it also takes all the work out of the eccie diet. I give him this, warm (they seem to like warm foods) along with some fresh fruit and leafy greens each day, and a bit of egg in shell or chicken bone maybe once a week, more if he is going through his moult.
So he has his warm mash and eats a HUGE amount of it, making a massive mess. Its awesome
