5 month old not gaining weight, Need advice

I am hoping someone can help me here, as we are getting concerned.
We brought our little SI Ekkie home about 2 months ago and at the time he was about 340g. As of today, he is still about 340g. Our typical feeding is as such:
Mornings: in his main bowl a varied mixture of veggies, todays was homemade sprouts, corn, green beans, and green peas (frozen/defrosted), carrots, celery, jicama, radish. We will mix in varied other things, cucumbers, zucchini, squash, frozen/defrosted berries, etc..
We also have other foraging bowls in the cage that will get variation of diffferent fresh fruit, pomegranate, wasabi green peas, and about 1 tablespoon of Volkman's Eclectus mix.
I am waiting on a delivery of some Volkman's Soak and Simmer to add to the mix for the morning feeding.

At night he gets a third of a cup of the the seed mix and a few other things, like more pomegranate or somethings we might eat (nothing processed).

As far as quantity for the morning feeding, we had been giving him a big half cup, but have recently increased it to a full cup, after reading Laurella Desborough's recommendations on feeding.

He has never really even finished the half-cup feedings, let alone the full cup. He doesn't act hungry. He is playful and cheery and ridiculously quiet.
He just doesn't seem to have the appetite that I expected through my research and many of the great posts I have read here, and he isn't gaining weight.

Should I be concerned, or doing something different?

Presently have six Greenwing Macaw (17 yo), Red Fronted Macaw (12 yo), Red Lored Amazon (17 y.o.), Lilac Crowned Amazon (about 43 y.o.) and a Congo African Grey (11 y.o.)
Panama Amazon (1 Y.O.)
Add some sweet potato to the mix. Your bird will love it, plus it's high in vitamin A. (And it sticks to the ribs.)

We've tried.. He picks it out and drops it to the bottom of the cage.

I'm actually shocked at that one! That's usually an Eckie's number one treat... (or an amazon's!)

Have you tried sitting him on your lap, and spoon feeding warm (not too hot) oatmeal?

I have not tried that, but will.
Do you think it is concerning that he has not gained any wieght, but seems perfectly fine otherwise?
