So I wanted to do progress videos with our rescue bird Sophie, she is 21 years old and we’ve had her for about a month now. What are some ways to build a bond and build trust with older birds?

She seems pretty trusting to me. A lot of my kids, especially the ones from abuse and hoarding situations, were absolutely terrified of humans and would thrash around in their cage during quarantine if I went within five feet of their cage. For your bird, I'd work with target training, reading to her, hand feeding the odd meal (Noah loved it when I'd feed him his chop and mash by hand), and letting her have naps on you. You can also play with toys with her while she's out of the cage.

She seems so social and sweet. Im so glad you rescued her.. and have the knowledge to provide her a good diet, and have her be an active member of your family. What a lucky parrot!
