broccolli/banana muffins

Hi guys,

a quick little recipe i have for parrot muffins:
(this makes you 12 to 16 muffins so you can freeze them if needed and leave them out overnight for the morning)

2 whole eggs (shell and all)
about 150gr of butter (soft or molten)
about 200gr of flour (it's quite moist so you'll need a bit more flour to give it a solid conistancy once baked)
tablespoon of baking powder (not with a massive heap on top!

instead of sugar - ground up about 150 gr of pellets (put in a bag and punch it kick it mash it - great fun!

some big chuncks of brocolli
grated carrot
half a bananna
(and whatever else you want to add, peas, chickpeas, sweet corn, beans, raisins, nuts....as long as it's not too moist)
mix wet ingredients first
mix all dry ingredients
mix wet and dry together
mix the vegies in (carrot, bananna - not the brocolli yet!)

devide the mixture into a muffin baking tray lined with muffin cups or whatever you wish to use - (i suppose its not so bad to have the parrots shred off the bits of paper but i remove them first before feeding them...)

and stick a nice chunk of brocolli right down the middle with the stem upwards.
bake in a pre-heated oven for 15 - 20 minutes (or whenever they are nice and solid)
(i tend to bake on 250 degrees for about 10-15minutes and the last bit on 200 or even 180.)

let cool before feeding it!

I'm not a fan of using the butter, but i haven't found anything yet that i could replace it with that's better for the birds. they don't get these very often, only on really special occasions! next one now will be christmas i guess :D - but i'll add a picture of my next batch ;)

it's a bit of a tricky consitancy to get right - but with the bit of brocolli sticking out, the birds think it's a right hoot! like a muffin-lollypop.
Making a batch tonight and i'll post some pictures, also making some DIY birdie -sleeping huts out of wooly hats so i'll keep you posted on that too - i have to look for the arts and crafts section on this form, i'm on a roll!

I'm sure the birds love it but there is something inherintly wrong with broccoli, banana like a meal made by a Disney villan to make the kids eat veggies.

haha i know - but sure, they don't mind it - and it smells surprisingly nice when it comes out of the oven! :)

When I make birdie bread I replace the milk/oil (can't remember which it actually calls for) with two small jars of fruit/veggie baby food. Maybe you could replace the butter with baby food?

Ive heard you can replace most if not all the oil/ butter in recipies with applesauce. Wonder if that would work?
