I have zupreem pellets and he eats those well enough. And he loves almonds and his papaya bits but I can't get him to eat anything else. I've offered pasta, steamed broccoli, cooked carrots, green beans and even scrambled eggs. He ignored his dish completely and once I have to remove it I offer the pellets again and he goes to town. Should I be worried that he's not eating fresh foods or is he fine with the pellets? I know they're usually not picky birds but I can't even get him to eat Strawberries or bananas.

If your bird is older, it can take a while before they will try new stuff. Maybe try spouting seeds. That's a great place to start. And keep offering soft/fresh foods. Try different ways, mix pellets in, clip greens to the bars of the cage, etc. Eventually usually even the pickiest bird will try it.

He's just a baby. Between 18 and 20 weeks. I know the breeder weans her babies with a seed mix they make themselves and I'm wondering if that's the reason he's being so picky. But I know all seed shortens your bird's life span as well.

Seed doesn't shorten a birds lifespan. Seed ONLY can do that. Most birds eat some seeds and nuts in the wild, so that's a fine part of a diet.

You may need to try for longer than he's been alive to get him to switch, but now's the best time to do it.

Sorry. I meant all seed diet not all seed. And I did have some success with some rice egg and carrot mixture. And by success I mean he tasted it before he shoveled it out of the dish. -_-

Ducati is a very picky eater. He was only eating seed when we got him and she had him for about a year. Have you tried putting a little of some small seeds in his fresh foods? Or maybe smaller pieces of his pellets. Just so when he goes to eat the seed or pellet he'll get a little of the fresh stuff with it. Of course you'd have to make the fresh stuff small as well.

I tried to just give Ducati and it didn't fly. So I put some seed in it (after a suggestion on here) and after a couple of days he didn't fuss and I could omit the seed.
