Cherry cake cubes

1/2 cup of sunflower oil
2 heaped tablespoons of palmfurit extract
1 can of cherries (drained and pitted) I have also tried apple
4 eggs
1 teaspoon of vanilla extract
1/2 cup of ground almonds (or nuts of your choice)
1 cup of sugar
2 cups of wholemeal flour
1 teaspoon of cinnamon
1 teaspoon of baking powder
1/2 teaspoon of vitamin/mineral supplement
1/2 cup of sultanas
METHOD:-
1. Mix the nuts, sugar, flour, cinnamon, baking powder, vitamin supplement and sultanas until well combined.
2. In a separate bowl dissolve the palmfurit extract in a 1/4 cup or so of hot water
3. Stir in the sunflower oil and vanilla extract
4. Crack the eggs into the dissolved palmfruit extract and also add the eggshells. Beat well and break eggshells into small pieces
5. Stir in the cherries
6. Mix the dry and wet ingredients together until well combined
7. Pour the mixture into a lined and greased loaf tin and bake at 180 C (gas mark 4) in centre of oven for about 55-60 mins
8. Remove the cake from the tin and leave to cool on wire rack
9. Cut the cake into inch thick slices and then the slices into inch cubes.

You can freeze these cubes and defrost them as required.

For Greys that require a little extra calcium, once a week add a drop of liquid calcuim supplement.

If you prefer to leave out the palmfruit extract just add 1 cup of sunflower oil instead of half a cup.

Also tried these and he ate them, well he picked the cherries out and ate them, told me they were good. He also picked out some of the nuts I'd put in for him, should have not bothered cooking, just given him the cherries and nuts, saved me some work. ;)
