I would like to concoct a nut, fruit, and veggie mix for my Cockatiel. :D
What would be some healthy, tasty foods I can add? (Multiple kinds of nuts, dried fruits and vegetables)

Here is a list of safe and unsafe foods for our feathered friends :D

just keep in mind your parrots size, so you may want to crush up some of the larger nuts and things :) Every tiel is different, but mine like hot pepper seeds and flesh, chopped peanuts, romaine lettuce, etc

Sunflower seeds are safe but imo not healthy
They are high in fat and some research says they cause disease, i stay away from sunflower seeds

Uncooked rice and beans can expand in your birdies tummy and cause him to explode (ಥ﹏ಥ)

Avacado is poison! (°ロ°)☝

Good Luck!

Peanuts may contain aspergillus which is a nasty fungi that can cause serious health issues. Generally speaking, human grade peanuts are "ok" as long as they do not contain mold. Roasted, un-salted peanuts might be a safer option.

Saying that, it also might be a better idea to stick with healthier, actual nuts. (Peanuts are legumes, not nuts. ;) )
