Coconut oil. Safe in small quantities?

So Gloria (BFA) likes crunchy snacks. I've been making her things like sweet potato chips and corn chips with flax, millet, and amaranth seeds. In order to make them crisp, I toss the uncooked chips with a very small amount of melted coconut oil before baking. Is this safe? Sometimes I use coconut oil cooking spray. I avoid all other types of oils. How much coconut oil is okay? She only gets one or two small chips (about the size of a nickle) a day.

Re: Coconut oil. Safe in small quantities?

AIt's absolutely safe and actually highly recommended to be added to the diet. Many find it a valuable tool to get their picky eaters to try something new.

You're probably looking at an amount the size of a fingernail. You can serve it solid or warm it up and drizzle the liquid over the food. If you serve warmed chop it'll probably wind up melting anyway.

Thanks. I toss thinly sliced sweet potatoes with melted coconut oil and crushed red peppers and bake them for chips. It's her favorite snack.
