tops bird bread

I recently bought a bag of tops bird bread mix and I have a couple questions;

Awhile ago I saw someone making a stink about it since it required "1 teaspoon aluminum-free baking powder" and I was wondering if it's really that big of a deal and if there's ant alternatives I can use? I didn't really read through the posts so I don't know what her reasoning and what not was.

And when I do make it, how should I store it? can I just keep it in an airtight container in our cabinets or does it need to be refrigerated?

I cut mine up and freeze it, but it's only once made it that far! Haha

ahh. I got some aluminum free baking powder because I was at the store so why not... so it's safe to use?

what is the texture suppose to be like?? It calls for 15 minutes and I'm up to 18 minutes and I feel like it's still undercooked
