Succulent Problem and random plant questions! Input needed :)

What's wrong with my succulents? This one in the middle looks really bad, as does the light green puffy one in the 2nd picture (leaves look a bit damaged but it's hard to see...I suck at succulents...
Anybody know which ones could make it through a winter outside? I don't even know what they are...

Also, I am growing ginger from the store. Do I need to bury the nodes deeper? I broke them off and just pushed them in a bit so that the green was still sticking out on the smaller 2. They are next to the shoot--- kind of hard to see...

Finally, is this a sassafras tree? The huge trunk behind it is actually the mother tree/same type...It had some tiny weird yellowish flowers underneath the leaves in early spring but the leaves are different shapes on the same tree.

how are you growing the succulents? Location/Amount of sun/Watering frequency/temperatures its growing in, everything you can share.

Can't help with the tree, unfortunately. Theres a reason I specialized in tropical/greenhouse plants.

The soil for succulents is a mix of potting soil and cactus soil--- mostly cactus/succulent soil. I don't water often but I transplanted them about 1 week ago. I guess I watered 1 x since then (not very heavily) but I did kind of man-handle them when transplanting lol..
They are in partial sun...fairly shaded though for most of the day.
The coldest they would have encountered overnight would have been temps in the 40s F. I have brought them in otherwise.

Any thoughts on the ginger?

All I can share is outdoor succulents in a temperate environment are nearly bulletproof.

I am not in a temperate environment (per-se)...It gets hot in the summer and cold in the winter-even though it's probably 40-low to mid 70s F here right now (depending on the day--with lows THAT low being rare in May), but I have a history of killing these darling plants (even indoors--over time) and it's frustrating...well, not really killing them..but allowing them to languish until they are hideous and gangling! My aloe is THRIVING indoors...but other succulents....meh...not so much (the ones inside that I haven't transplanted are doing okay I guess inside the house in their tiny pots). Perhaps these struggled with the transplant (despite having placed them in special soil)...

I feel like I have left them alone quite a bit (way more than any other plant) and the ones inside are okay, but these...not so much....Do they need more or less water? More or less sun?

Meanwhile, my viburnum is *knock on wood* still alive....I think? I am used to caring for a cockatoo, BUT because of that, I have made a conscious effort to be a bit more hands-off with these dang plants LOL (THEY DO NOT NEED AS MUCH ATTENTION)...and STILL!!! Is it sunburn???
