How big can sprouts safely get?

Im debating making a setup for sprouts beside my birds cage but I was hoping to have it similar to fodder in the sense that the sprouts would be big (around 2-3 inches) and was wondering what’s seeds are still safe to feed when they are so big? I’ve heard wheat berries are good but I still want to double check
