I wouldnt try to do anything she doesnt want to do right now. By the end of a week she should be fairly comfortable. Dont force handling, not sure by with a towel you mean toweling her, as in throwing it over her to pick her up but if so definitely do not do that right now, thats really only for emergencies or if needed when clipping nails, beak etc. Youre going to scare her and thats not what you want. Sit by her cage and talk to her and offer some treats, see if she will eat out of your hand. Work slowly and slowly and when shes a little more comfortable work on having her step up to your finger. You mention she bit you, thats going to happen. If she bites it means youre doing something she doesnt want done, so back off. For this first week dont push any boundaries but in the future discourage biting by positively reinforcing when she is good and leaving her alone when she bites, but its inevitable to happen sometimes. Also like mentioned, the cage is definitely not too big, but you should get lile 3 or 4 more perches in there. Perches are where she will be playing with her toys on and with just one she probably cant reach all the toys too. You can sit by the cage and open the door and just talk to her. If she doesnt want to come out dont force her, eventually she will come out to explore. Once shes comfortable eating treats from your hand you can slowly work on getting her to step up on your finger, and if thats going slow, try a perch. You have to slowly build trust and this first week is more so about her adjusting so dont go too far and scare her or that trust will be flawed and take longer to build.
Also, what kind of diet is she currently on? You can start introducing fresh fruits and veggies soon now so she grows to like fresh foods when shes young!
