Hi, I am wanting to start breeding CAG birds sometime in the future and I am wanting to ideally buy 2 young birds and after afew years and they are old enough let them start breeding in my Avery. Just wondering at what age can I expect to see if the birds pair up? Like will they only start pairing up and show affection to one another when they are mature enough to breed or can I get an idea of what's to come when the birds are 2 years old or so.

There is never any guarantees that 2 birds will get along let alone breed.

With Greys' it much longer, more like seven to nines and commonly several years more before they are successful.
With Parrots, it just doesn't happen, it requires extensive knowledge, equipment, and training that involve lots of money, and long hours learning. The successful individuals spend years understudying a true professional prior to even selecting a 'proven pair.'
FYI: I understand that you need to register with the Government to be a breeder in your country.
