Congrats, Grey's are awesome birds
Take baby steps, one day at a time.

Baby birds tend to be clumsy, just like tiny human babies.

A bird must have time to settle down and adjust. Just imagine how many new things the bird has encountered, in the last few days. So many new faces and voices, it must be so scary.
To gain your trust could take days, weeks, months even years. Each and every bird is so different. Great that she is coming out the cage on her own.
When in her big cage,
sit near the cage, talking and singing to the bird. Let her become familiar with your voice.
Leaving the cage door open, offer her treats through the bars at first. When she willingly accepts them, try placing a treat near the open door. Eventually she will starts taking the treats from the door. When she does come out, she will probably climb around on the cage. Let her explore in her own time. To get her back in, place a treat inside the cage, making sure it's visible.

The toys will keep her entertained and stimulate her for hours on end.

First of all , congrats on your new baby.
Sometimes you have to find the right toys that really hold their interest. My TAG is almost 9 mos now , he was 5 mos when I got him and his favorite toys in the world are foot toys . I zip tied a sea grass basket to his cage and filled it with all kids of foot toys and he sits there forever digging through it. I also hide Nutri berries and almonds wrapped in cupcake liners in there so he finds little treats : )
To get him interested in playing in the floor I used a little wiffle ball and got him to chase it around. did not take him long to discover our toes and realized those are even more fun to chase : )
I was also afraid of him falling at first and kept the bottom padded with towels and made sure he had a little trail of perches in his cage so he could get around easily.
A far as engaging with her , you could try reading to her , even if it's just sitting at your computer reading your emails . I also would walk Cosmo all over the house showing him things and telling what they are and he really liked that. You might also try playing with a toy in front of her and then offering it to her . I have to do that if a toys scares him , usually if I play with it first then he will.
Their kinda like kids ...lol

She likes to chew on stuff. (still "teething")

It's likely never going to stop, fair warning. :52: Jasper turned 8 months old yesterday and just recently he has taken to chewing up wooden blocks, the toy parts like baby blocks as well as the thick coloured slabs in his Lots of Knots toy. I figured with the latter he would keep busy untieing the knots..no..he chews through the wooden parts like a beaver. Every day his cage tray is full of toothpicks.

Every baby is different and I would just keep the options available. When I went to visit him before he came home Jasper had no interest in any of the foot toys available in the play room. One day out of the blue he decided they were worth checking out. Not sure if you mentioned having any or if anyone mentioned them but foot toys are great. Little things they can pick up on their own and chew on or play with, wrestle with. That might be something your baby might play with first before interacting with any hanging toys or puzzles.

oops I see Parrotmama did say that.

Congratulations!
I brought home my bird too , he was 6 months old , he acted the same way as your parrot! but it took him almost 4 months to get used to us :D

now he's getting out of the cage, sitting near the window, wanting a head rub , a very good whistler , he didn't talk yet .. but I'm guessing he's starting to! he imitates our whistles and tunes! but trying to talk and haven't been able to :D

one step at a time :D
