my male Cockateil keeps attacking the female

Yes agreed with Silversage above, Cockatiels are generally pretty easy to guess gender based on their color mutation. If you post a picture, we would be happy to assist in distinguishing gender of your birds.

I cannot see Ruby clearly (need full view of ace and body) but from what I can tell in the second one, Max looks to be a male as he is very similar in markings to my male who is a whiteface.

Ruby looks to be a female to me, at least for now as she's young. If her face lightens up like this cockatiel here (my male, Boo looks very similar), then a male. But if Ruby stays dark around her face, usually is the best indicator of female.

You could make them bird bread and add in some fruits an veggies there to get them at least used to the taste of it at first, then you can make a 'chop', as parrot people call it, a mixture of freshly chopped up fruits and veggies for them to enjoy. You should avoid too much fruit as it contains a lot of sugar but they should have an abundance of veggies. You can experiment by buying a few different kinds at a time, chopping them up into bite-size pieces and presenting it to them when they are hungry, or you could mix it with the seed mix or whatever food they are on now.
