8 Weeks old baby Amazon?

As you already know, every parrot is, well, it's own bird so to speak. AN individual, just like people. Trust me you will see some push back as you call it , at some point. And maybe you will wish you had not asked for it, ha ha. Expect it when she approaches puberty.

My Amazon did not really start to act up until almost 3 years!

I'm so happy to hear how well Stormy is doing! I remember the mostly naked baby he was in the beginning, and he's grown up to be such a beautuful, happy, well adjusted parrot that doesn't nip or bite.
Is he going to change? At seven months he's still very young for a larger parrot that can live 50+ years. Puberty is the most difficult time for pet parrots and their humans, but that's still a pretty long way off- maybe 2 years from now. Hopefully our experienced Amazon owners can advise on that. In the meantime you should read past threads and other sources online like Bird Tricks to get help on how to handle negative behaviors as they occur which they likely will to some degree with such a large intelligent parrot.

You are lucky your Stormy is tolerant of strangers. Parrots are individuals. Some dependent upon environment and living situation are 'tolerant' of strangers. Others aren't. The ultimate test is when puberty and hormones hit. Personality can seem to reverse. Love to intolerance; intolerance into aggression. That's a trial for all owners and parrots. Be aware. Work on a regular schedule of some kind of activity. Trick training is mentioned. Continue to learn your parrot. That's going to be your best way to deal with Stormy.

When I hand raise a baby budgie, one of my goals is to raise a bird that is self confident and isn't afraid of new people, places and things. I've been pretty successful because the three I raised are pretty much fearless and it rubs off in the others I didn't handraise. I expose them to lots of different situations even before fledging and now nothing faces them.
I must admit, however, that the Goffins cockatoo I got at 3 or 4 months old acquired a fear of men except for my then husband when she was going through puberty at about 3 ÿears old. I don't think I exposed her to enough different men to prevent this fear from developing.
Anything can happen as Stormy matures and goes through puberty but it sounds like you have built a good solid foundation to give Stormy the confidence he needs to navigate life as a companion parrot in a loving home. Keep up the good work. Keep exposing him to as many new but safe things and things should go better than most. Read old threads and online sources on how to stop bad behaviors before they become so ingrained they're difficult to break.
