Aww! Mitch is such a cutie! My tip based on my limited experience... positive reinforcement for absolutely everything he does that you like. Whether it's, a simple "good bird", a treat, or pick up one of the inexpensive dog clickers and click at the exact moment when he shows/does the behavior you like, and saying "good bird", and then treat afterwards.
Again, I am not an experienced owner, this is what I have read and tried, and it works for me.
A book you may want to look into from Amazon (I alway buy used if available because I am an information border and it gets expensive).. Clicker Training for Birds. There are so many more books on Amazon I bought but that is a good start on your question (if you choose to go that route). Now, there is a wealth of info on training birds on the net for free... one place is right here.
I am sure more experienced bird owners will chime in, but that's my .02 cents.
Congratulations on bringing Mitch into your life!!
