My African Grey is pooping less than normal for about 2 to 3 weeks. I don't notice any different in the bird's normal activity. Any Ideas?

I'd say a visit to an avian vet is the best idea.
Obviously any changes in diet can affect poop number and appearance.
Is your bird a female or a male? Females in hormonal breeding condition getting ready to lsy eggs poop less frequently and their poops are much bigger.
I'd put plain white paper towels on the cage floor at night and check poop numbers and appearance in the morning. If anything is odd looking save the towels for the vet to look at or photograph it.

Thank you for that reply. Sounds like good advice.

Poop and weight are 2 good indicators of parrot health. If the Op has been keeping a weight log on the parrot, they may have noted a change in weight that would also be a trigger for a vet visit. I weigh Salty at least 1X a week and record it, when things are normal. IF he were to eat less or his poop changed, I would expect weight to drop. A change of 3-5% in a short period would send me to the vet.
