i have read previously about ekkies that can just be a pain by ways of deciding they suddenly dont like something they used to love. Which i guess is okay if they then find something they like instead.

Pickle has decided that all lettuce/cabbage/brussel sprout/(basically anything green and leafy) must die, and growls at it and attacks it until it falls out of his bowl

he used to completely adore red capsicum and red bell peppers when we gave them to him, but one day we gave him a pepper, and he took one bite, and hasn't touched either since, unless it was to throw it on the floor.

Same thing with corn. Any type of corn, cooked any way used to be the first thing he went for if it was there. but around the same time as the capsicum, he decided corn wasnt interesting anymore. i tried making a cob into a foraging toy and he wouldnt touch it at all.

Any ideas on how to reintroduce foods to their diet?
OR what other foods i could try next to replace them with so he still gets the nutrients? - i would be okay with him still hating them, but he hasn't really taken to eating anything else instead. It doesn't seem like a change in preference, so much as a narrower one. Is this normal?

he still has a varied diet, with sprouts, seeds, pellets, fruits and peas and things he eats. but anything else i have to boil and mash into sweet potato until it cannot be sorted out, or cook with pellets water and egg into little bird cakes. :/

its just confusing that i have to do this for things that i used to be able to use as a reward...
