So I had a good look at his cage liner today. I have changed the way I feed him so I could better tell what he's eating. He is literally only eating one seed. He is even picking out his broccoli. I've included pics of his food and what he is eating. He is only eating the ones in the photo where all the seeds are the same. One one hand I'm impressed he can pick out such small pieces of broccoli but I also know it's not good he is so picky.

I have been giving Buddy, my GCA, and Venus, my Ekkie female, veggies, nothing else. Buddy I have no issues with but Venus, she's hard. She is very young and has been on a seed diet so I have cooked rice, heat it and mix fresh veggies with it. This is working for us, just a thought/suggestion.

My concern with that is he simply won't eat and starve to death.

You can try a mix of fresh foods and seeds. I've found that my Venus will go for seed first so I'm working on her with fresh veg and fruit only. She is slowly adapting, even to the point of climbing in my personal plate of food, I let her eat hoping to convert her. My method is not absolute, and I hope others will share their methods.

Try sprouting those seeds. I don't do it for my birds...yet...I did buy a sprouter so I'm thinking of it. You don't need to buy a sprouter to get started.
SilverSage and Kiwibird both do sprouting. It is extra work but it might get your bird more food.

Still won't eat any people food or pellets but has discovered that the other seeds are edible.

Have you tried boiled, brown rice? That is working for Venus and I. I mix veggies in it, so far rice and/or peas work and fresh blue berries too.
