Picky eaters

Are any of your birds picky eaters? My sun conure Nicky is so fussy about food and I don't know how to give him a nutritious diet. I have tried switching him over to pellets several times and it worked for about a week and then he wasn't eating that much so I put him back on a seed diet. I know that he will starve himself because he has done that once before and I had to make an emergency run to the pet store to get him the food he likes. He used to love dried papaya and pineapple but not so much anymore. He loves walnuts, peanuts, and fresh fruit but I only give those as treats. He will not eat vegetables. He picks out and pretty much only eats the safflower seeds from his food and I know those are fattening. I was thinking of getting those vitamin drops for his water but I know that won't be enough. I don't know what to do! Should I try slowly converting him to pellets again? If so, does anybody have any suggestions for what kind to get?

Nicky is 7 years old and I had him since he was 10 weeks old. He never used to be this picky when he was younger. I want my baby to live a long and healthy life. Please help!

It took me 2 weeks to convert my bird to all pellets. Per my vets suggestion take out all food from cage at night. Do not mix seeds with pellets because the bird will not eat the pellets and pick out seed. When you put seed in the cage next morning measure the amt. Then measure at the end of the day to see how much was not consumed. Next day reduce that amt. of seed by how much was not eaten. Keep doing this until less and less seed is consumed. Try Harrisons (small size) in another bowl. Start out small as you will be wasting some. Harrisons is kept in refrig. I throw out what is left and give fresh the next day. There is only power left after my bird eats them. At the same time you are offering all the fresh foods too.
