Malted barley berries?

I am fairly sure malted barley should be ok, but am passing it through the flames of the forum anyways!
I am a home Brewer, and I grind my own grain, in the middle of a batch, 'duh', it hit me. Malted barley is made by sprouting the grain, then drying. Any reason not to use as a snack?

How are you sprouting it? Are you adding anything? Barley is good. No need to dehydrate. Maybe alternate for variety?

It is bought this way. They sprout it, then kiln dry to halt the process.
