my Sun conure was nibbling on these and now I'm paranoid it's a toxic plant and she will become sick?

I'm not 100% certain, but your plant looks to be a Crassula argentea variegata (Variegated Jade Plant), and they ARE safe.

Please have a look, here are 2 different photos of Variegated Jade Plants. Is this what you have???

If so, then your bird will be fine (UNLESS you've sprayed the plant with insecticide)

Both pictures are of Variegated Jade Plants. Do a Google IMAGE search, type in "Variegated Jade Plant", perhaps that will clear things up. They come in all different sizes, and depending on location and light, not all grow the same.
