Correct me if I'm wrong, but if you get rid of the eggs the day they are laid(and replace with dummies), they aren't really fertile yet. The embryo doesn't start to develop until the hen starts incubating which can take up to a week.
You are right. They aren't fertile right away.
Ps: don't forget to mark the fake eggs as you are replacing the real ones. It is sometimes hard to tell the fake from the real ones
